Delicious "Lemonies"

My husband is weird. I don't know how it happened, and I can not explain it, but the man despises chocolate. That would be a good thing for me, you know never worrying about him taking my hidden stash, except for the fact that the kids all inherited an absolute love for the rich velvety stuff from me. So, it is still never safe. Rocky does, however have quite the sweet tooth. I myself have always felt that eating anything sweet in the absence of chocolate is a good waste of sugar. But I must say that these little gems have made me change my mind...although chocolate chips might be a good addition. I adapted this recipe from my favorite brownies, a gift from my sister. The lemon adds a fun twist to an old favorite. And it is made all the more delicious by the addition of lemon essential oil.

Lemon Brownies ("Lemonies")

1 cup butter
2 cups evaporated cane sugar
4 eggs (from the backyard is best...unless you don't have chickens, then don't touch any you may find there.)
1 T lemon juice
1 t lemon zest
2-3 drops  lemon essential oil
1 1/2 cups whole wheat flour ( I used 1 cup ground hard white wheat and 1/2 c ground soft white wheat.)

Whip up butter and add sugar. Once it is a fluff mixture, crack the eggs open and add the insides. Once that is all nice and mixed, add the lemon juice, zest and oil. Then finally add the flour and mix until combined.

 It may not work if you don't have one of these to help you.

Put it in a 9 by 13 pan. I like mine a little thicker, so I used a smaller pan. Bake at 350 for 35-40 min. If the edges start to get too brown, cover loosely with foil or a Silpat.

 While it is cooking, mix up the glaze.
1 1/2 C of powdered sugar
1 T lemon juice
1 t lemon zest
2-3 drops lemon essential oil
2-3 T heavy cream
Mix well, pour over hot lemonies when they come out of the oven. Then let sit until cool, or if you are like me, dig in right away and enjoy it while it is hot.

Never one to leave things alone, I think next time, I will make a coconut lime version. Because in the absence of chocolate, the only thing that can even come close would be coconut and lime! Or in hubby's case, Mountain Dew....no folks there is not an oil for that!

  5. i used to be lucky with the same confliction (i think i just made that word up)... my partner never used to like sweets at all. MORE for ME! ...then one day he caved and now i'm lucky if i get one bite out of my dark chocolate with rock salt bar.

    ...also, i LOVE the lemon in these! i put lemon in everything - why not lemonies? :)
