2 Soft Bananas
1/2 C Natural Peanut Butter (or other nut butter)
4 T butter or coconut oil
4 T honey or maple syrup
1 t vanilla
2 T coconut flour (optional)
1 1/2 C oats
1/2 c ground flax seed
1/2 t salt
4 T mini chocolate chips or raisins
1 C coconut flakes or other dried fruit (Apricots would be good)
Smash the bananas and add the peanut butter, fat, sweetener, eggs and vanilla. Beat until smooth and creamy. Next, add coconut flour, oats, flax, coconut and salt. Mix until combined and stir in chocolate chips or raisins. Line a baking sheet with parchment or a Silpat or use a baking stone. Place 2 T of dough to fit 12 to a pan.
Bake at 350 for 12-15 min or until set. Allow to cool completely.
You can also make a raw version of this cookie for a great snack! To do this, omit the banana, coconut flour, baking soda, and eggs. Increase the honey to 1/3 cup. Mix the peanut butter, honey, and vanilla, add the rest of the dry ingredients and roll into balls. Store in an air tight container in the refrigerator. We like to use this version for school lunch!
Shh, don't tell my kids it's oatmeal. They will never eat it if they know. Cookies for breakfast? I am pretty sure that makes me mom of the year!
