Make your own karo syrup. I have found recipes that use honey or maple syrup. Two problems there: Expensive!! And neither one is the flavor I want in my marshmallows. So, I made my own "karo." It is better than anything! And really easy.
2 cups Organic Coconut Palm Sugar
1/2 cup water
1/4 tsp cream of tartar
Cook on medium heat, stirring constantly until it comes to a boil. Then clip on a candy thermometer and let it go for 12-15 min until it reaches soft ball stage. (Around 234 F) Yields 1 cup of syrup.
Yeah, it is brown. But so is our bread and we love it! The taste of this is very rich and sweet. I love it. Add maple and vanilla here for an awesome home made syrup.
Make the marshmallows!
