2 T Olive Oil
1 medium yellow squash, thinly sliced
1 medium zucchini thinly, sliced
1 sliced red pepper
1 sliced onion
1 tsp taco seasoning
Juice of one lime
1 handful chopped cilantro
If you wish you can add a pound of grilled steak, cooked to your liking. Saute veggies until crisp tender, season and squeeze lime juice over the top. Add steak if desired.
Now for the fun part!
Almond Flour Tortillas
1 1/2 cups almond flour
1 t olive oil
1 t nutritional yeast (for a cheezy flavor)
1/4 tsp salt
Combine all ingredients to make a workable dough. Start with one cup of the almond flour and add a bit at a time until you can roll the dough into a ball. Then divide into five equal sized balls.
Using the palm of your hand, press the balls flat, then use the whole hand to get them as thin as you can. They peel off a Silpat quite easily, but you must handle them carefully. Place them on an ungreased (medium temp) griddle and cook on both sides for 2-3 minutes until golden.
These are not flexible, so best used as a chip or tortilla. They work great as tostadas or would be delicious dipped in guacamole.
