Broccoli and Cheese Soup

I am not sure how it happened, but I ended up with kids who love broccoli. Even my picky four year old will eat it. Although it turns out, he will not eat it as a soup. I guess it touches too many other things. The rest of the kids did eat up and we enjoyed this comforting soup on a cool fall evening. what can I say, I am obsessed with soup lately! It is so easy to make that it would be criminal to eat out of a can.

2 large bunches of broccoli
1 cup chopped carrots
4 cups chicken stock
1/2 onion, diced
1 cup milk
1/2 cup cream or half and half
2 T butter
1 T flour (or GF thickener like arrowroot)
1 cup cheese
Salt, pepper, dash of nutmeg

Add carrots, onions and broth to a pot. Bring to a boil and cook for 10 minutes, then add the broccoli and cook until it is fork tender. Add all this to a blender and pulse for 5-10 seconds. (Or use an immersion blender if you have one...yes, that would have been easier!) Return to the pot and add salt, pepper and nutmeg. Allow to simmer over low heat.

In a small pot, over medium heat, melt the butter and add 1 T flour. Stir for one minute until it smells nutty. Remove from heat and add the milk, return to the heat and stir continuously until thickened. Pour the roux on the veggies and stir in the cream and the cheese.
