Sausage and Peppers

Do you ever have an evening where dinner is the last thing you thought of? The old me would send for a pizza or burgers. But knowing that going hungry would be better for us than filling our bodies full of garbage, I try sometimes to think outside the pizza parlor! Such was the situation tonight. I had a bunch of produce needing to be used and some Italian sausage in the fridge getting close to being no longer edible. This is the dish I came up with and it was a hit!!

 


Italian Sausage and peppers

1 pound ground Italian sweet sausage
1 onion, chopped
1 red bell pepper chopped
2 cups chopped butternut squash
1 teaspoon Italian seasoning
1 clove of garlic
1/2 cup Italian cheese blend
8 large lettuce leaves

Brown the sausage, then add the veggies and stir fry until tender.

 
Sprinkle with Italian seasoning and cheese and stir.


Allow to cool a bit before spooning into large lettuce leaves for "sandwiches"


The results were FANTASTIC! Everyone in the house cleaned their plates. Best of all, no run to the pizza shop required!

  1. Is the chopped BUTTERNUT SQUASH pre-cooked? (This sounds like a very good Vegetarian recipe when you leave out the sausage!) THANKS for sharing!

  2. No, the butternut squash was raw when I put it in. It would be the perfect meal with or without meat!
