Raw Protein Bites (With Hidden Veggies)

The other day, the neighbor kids came over while I was making some snacks. I thought that would be great market research, so I gave each of them one. They ate it and said, "oh these are good." I told them they were also healthy and had vegetables in them. One of the boys went outside and told my son, "Those things your mom made were good, until she told me they have vegetables in them."
Yep, plenty of them including: pumpkin, butternut squash, berries, rhubarb, yellow pepper and more!!!

Score one for mom!

This recipe can be made with shelf stable ingredients that store well. Something I try to keep a big stock of in case of an emergency.

Raw Protein Bites

 (Made with Blendfresh Orange)
(Made with Blendfresh Red)
1 cup oats
1 cup coconut
1/2 cup chocolate chips or dried fruit
6 T Powdered Peanut Butter (or 1/2 cup of the real stuff)
1/3 cup raw honey or maple syrup
1 scoop Blendfresh Raw Protein Powder
1 scoop Blendfresh Fruits and Veggies.. any color
1 scoop Blendfresh Fiber

Put the PB powder, Blendfresh Fruits and Veggies and Fiber in a medium bowl. Add enough water to (approximately 1/3 cup) make a peanut butter consistency. Then add the honey. Mix well. Finally add the oats, coconut, protein powder and chocolate chips and mix well. It will be thick, and hands work well for this. Shape the mix into balls of whichever size you choose. You can eat right away. Store in the refrigerator.

Fresh Strawberry Lemonade

This recipe is hard to write down because everyone has such a different taste when it comes to lemonade. I like mine tart more than sweet. And I like to use xylitol or Stevia rather than white sugar. Others may like honey. So, experiment to your hearts content. I will share with you the recipe that most people seem to like, which is a sweeter version than my favorite. Filled with raw fruits and veggies, you never had lemonade like this before!

Real Strawberry Lemonade:

For a crowd (or for my family for one meal)
20 Lemons,
1 1/2 cups of sugar
2 scoop Red Blendfresh
2 cups organic strawberries
3/4 gallon filtered water (add more for a weaker lemonade)

Juice the lemons and add them to a blender. Add the sugar, Blendfresh, and berries and give it a whir until the berries are smooth. Or leave chunks if that pleases you. I like to use frozen berries as it makes the mix cool. Pour into a gallon sized jug and fill it 3/4 full or to taste.

If it is too sour, add more sugar, too sweet, add more lemon juice. Too strong, add more water, too weak... um, too late!

For a single serving,

2 lemons
2-4 T sugar or xylitol
1/2 scoop Red Blendfresh fruits and veggies
3-4 large strawberries
1 cup water
Add to a blender or magic bullet and process until it is perfect!

Enjoy some veggies in your lemonade as Blendfresh Red contains fun fruits and veggies like prickly pear, rhubarb, beets, tomato, and red pepper!

Apples 'N Greens Knock-off

I am a Jamba Juice junkie. I love the stuff. I was especially excited when they started making some with vegetables. Apples and Greens is one of my faves. But they are pricey and probably have a few ingredients that I do not approve of. Plus, the sugar content is super high. Who doesn't love a makeover? For a fraction of the cost, you can make your own version but thanks to Blendfresh fresh dried fruits and veggies, you can lower the sugar and really beef up the phytonutrients!

Jamba Juice ingredients:
Apple
Kale
Banana
Mango
Strawberry
Peach

My Blendfresh Recipe:

Apples and Greens Knock Off

1/2 cup frozen strawberries
1 green apple cored and quartered
1 cup almond milk
1/2 scoop Blendfresh Yellow fruits and Veggies
1/2 scoop Blendfresh Green Fruits and Veggies
1 scoop vanilla protein powder

Always put the liquid in first, then the powders, followed by the whole fruit and ice. Select the smoothie button on your Blendtec if you are lucky enough to have one. Process until smooth and enjoy.

Need a boost?
1 scoop fiber or 1 tsp probiotics

Get a load of all the fruits and veggies in this combo: Apple, strawberry, kale, kiwi, collards, cabbage, spinach, peas, beans, pumpkin, oranges, banana, peach, butternut squash, and more..in total, this smoothie has 25 different fruits and veggies!

The green apple in this one gives it a great tart taste, but it is sweetened by the stevia in the protein powder. It is a healthy, low sugar, candida fighting treat.
