Lemon Berry Swirl Cake

The idea for this recipe came from my 5 year old son who asked if we could make a colorful cake by mixing all the Blendfresh fruits and veggies together. I talked him out of green, cuz cake with asparagus, kale and spinach does not exactly sound like a party!! So, we opted for purple and reds which have more berry flavor. The result was beautiful and no artificial colors were used!


1 cup coconut oil
1 stick butter
2 cups sugar
4 eggs
Zest of 2 lemons
1/2 cup lemon juice
1 cup milk
4 cups organic white flour (Or ground soft white wheat)
2 T baking powder
1 scoop of Blendfresh Red or Purple or a mix of each.

I threw it all in my Blendtec  blender and let it rip. There is no end to what this blender can do!! Turned out great. But, if you want to go the more traditional route then do the following:

Mix oil, butter and sugar until smooth. Add the eggs one at a time. Then add the zest and the lemon juice, the baking soda and one cup of flour. Mix until smooth. Then add 1/3 of the milk and another cup of flour and mix until smooth. Then add another 1/3 cup of milk and a cup of flour, mix until smooth. Then the rest of the milk and flour and do the final mix.

Pour half the batter into a 9x13 baking dish. Then add your choice of Blendfresh to the other half. . The reds and purples stand out the most. Do a full scoop of one or 1/2 scoop of each to add color and a slight berry flavor. Stir well to incorporate.

Drop spoonfuls of the red mix on top of the yellow cake. Then use a chop stick or knife to swirl the reds into the yellow. I go up and down vertically, then again horizontally.

Bake at 350 for 35 min or until a toothpick inserted in the middle comes out clean.

3 oz cream cheese
3 TB butter
Juice of one lemon
1 t vanilla
2-3 cups of powdered sugar

Once the cake has cooled, frost liberally! Cut and enjoy.

This cake is dense and moist and delicious and not a hint of vegetable flavor. I love that it contains no artificial food dyes that are linked to hyperactivity! Just another wonderful way to use Blendfresh!!
