Loaded Taco Soup

This recipe is kid approved, if you don't count my 5 year old who doesn't like anything. It is loaded with is tons of fruits and veggies. The kids loved it and I had seconds, and thirds, and maybe even fourths, but who is counting?

Loaded Taco Soup:

1 lb grass-fed ground beef, cooked and drained
4 cups organic beef broth
1 can mild Rotel or preferred salsa
16 oz organic tomato sauce
14 oz organic tomatoes, canned or freshly chopped
24 oz cooked organic black beans
1 cup frozen organic corn
2 scoops yellow or red Blendfresh Fruits and Veggies (or one of each)
Taco Seasoning, salt, pepper and garlic to taste.

Add beef broth to cooked and seasoned ground beef. Then start adding cans of stuff. Add the Blendfresh and adjust seasonings according to taste. Bring it to a boil and turn it off. Or put all the ingredients in a crock pot and cook on low for at least 4 hours.

This soup is delicious alone but really comes to life with a dollop of organic sour cream, organic corn chips, cilantro and green onions. And don't forget the cheese! Nothing is truly loaded without cheese!

  1. We have had taco soup that was a bit different from this... and we loved it. The fruits and veggies was different... but sounds good! :)
