Mint Almond Joy Bars (THM)

Halloween is over and so probably, all the Chocolate is gone by now...I know it is in my house. Anything with chocolate and peanuts goes first, followed closely by the chocolate and coconut treats. Well, good riddance! You can have a healthy, hearty variety any time you want with this home made version. Mint is optional, but really make this kick!

If you are following the Trim Healthy Mama (THM) plan, this is an "S" snack.
2 cups shredded coconut
1/4 cup butter or coconut oil
1/2 cup Almonds or pistachios
1/8 tsp stevia
2 drops spearmint oil
Pinch of salt
1 T Blendfresh Green Fruits and Veggies or 1/2 avocado (I use both)

Put all the ingredients in a food processor and let it run until a fine crumble forms.
Press into a 9X9 pan.

Chocolate Ganache topping
1/4 cup coconut oil
4 T cocoa
4 T powdered Xylitol
Pinch salt
1/2 tsp vanilla
2 drops spearmint oil
4 T heavy whipping cream

Melt coconut oil, xylitol and cocoa on low heat until it is smooth with no clumps. Remove from heat and add the remaining ingredients.

Spread on the nutty blend, put in fridge or freezer to set.

Makes 16 small bars. I say that 2 is a great serving for a snack one for a dessert. But I won't judge.
1 cookie has 97 calories, 9.4g fat, and 2.42 net carbs.
